Chef Gabriela Cámara’s Cantina Contramar to Open at Fontainebleau Las Vegas March 28
Cantina Contramar, led by Chef Gabriela Cámara, will open at Fontainebleau Las Vegas on March 28, 2026. Reservations are now available online and on Resy. Located on Level 2 of the resort, adjacent to the retail district, the restaurant will operate nightly from 5:30 p.m. to 10:30 p.m. beginning March 28.
The menu showcases Chef Cámara’s 27-year legacy, blending seafood dishes with classic Mexican cantina fare. Offerings include ceviches, aguachiles, raw bar selections, Wagyu carne asada, and shareable plates such as Pescado a la Talla Contramar-style. The menu features favorites from Chef Cámara’s Mexico City restaurants, Contramar and Caracol de Mar, as well as new dishes created for the Las Vegas location.
Menu highlights include Aguachile Negro de Res, Ensalada César Estilo Cantina, a tostada flight featuring the Contramar classic tuna tostada, Sopes Playeros, Sope Elegante, Pescado a la Talla Contramar, Camote a las Brasas, and Chamorro. All main dishes are served with handmade tortillas prepared in-house. A dessert cart will offer a selection of desserts.
The beverage program centers on agave spirits, with approximately 50 tequila and 15 mezcal selections, alongside a range of classic spirits. The cocktail menu includes collaborations with Tequila Casa Dragones co-founder Bertha González Nieves, featuring Casa Dragones cocktails, pairings, and a flight of the brand’s expressions. The wine list includes producers from the U.S., Europe, Mexico, and South America, selected to complement the restaurant’s cuisine.
Cocktails such as Carajillos and Margaritas will be served tableside from a beverage cart. The menu also features drinks, including the Paloma and house-made Clamatos, along with selections inspired by the original Contramar restaurant in Mexico City.
